Porcupine Rice Meatballs

Looking for a twist on the classic meatball? Try our Porcupine Rice Meatballs! They are full of flavor and extra filling. This may just become a household favorite for the kids and grown-ups in your home!

Ingredients
1 ½ lbs. hamburger cup
¾ cup uncooked rice
1 tsp. salt
1 egg
½ tsp. pepper
¼ cup finely chopped onion
2 ½ cups stewed tomatoes
1 tsp. chili powder
1 tsp. sugar

Optional Ingredient
Bay leaves

Mixing Instructions
Combine hamburger, rice, salt, egg, pepper, and onion. Shape into 1 ½-inch balls. Combines tomatoes, chili powder, and sugar. Then, you can boil or bake. If using bay leaves, sprinkle leaves (to taste) on top after boiling or baking. See instructions below.

Boiling Instructions
Heat boiling in kettle. Drop meatballs in tomatoes mixture. Cover. Simmer slowly about 1 ½ hours.

Baking Instructions
Cover and bake in the preheated oven at 350° F for 45 minutes. Uncover and bake for 15 more minutes.

How to Make this Recipe Lighter
– Use lean ground beef or turkey.
– Use a sugar substitute instead of sugar. We recommend checking the specific brand’s guidelines for proper conversion, as measurements may vary depending on the type of sugar substitute used.
