Irish Soda Bread

March is the perfect time to try our Irish Soda Bread! This is a quick bread that does not require any yeast. This dense, soft bread pairs perfectly with a hearty stew or corned beef and cabbage.

Ingredients
3 cups flour
½ cup sugar
Pinch salt
3 tsps. baking powder
1 tsp. baking soda
1 egg
2 cups buttermilk
¼ cup butter
1 cup raisins

Optional Ingredient
½ tsp. caraway seeds

Instructions
Mix dry ingredients. Beat egg into buttermilk. Blend butter into flour mixture until it is the texture of coarse meal. Add raisins (and if adding caraway seeds, add now). Make a well in flour and pour buttermilk into center then blend. Dough will be sticky. Put a little flour on your hands and knead a few times. Turn into 8 x 8-inch greased dish. Cust a cross in center and bake at 350° F for 1 hour. Please in cold oven – DO NOT PREHEAT OVEN. Remove from oven and let set a few minutes, then turn onto a wire rack to cool.

How to Make this Recipe Lighter
– Use a sugar substitute instead of sugar. We recommend checking the specific brand’s guidelines for proper conversion, as measurements may vary depending on the type of sugar substitute used.
– Use low-fat buttermilk.
– Use light butter or margarine.
