Spicy Cornbread

Cornbread with green chiles in a pan on a wooden table.

Tender and a little crumbly, our Spicy Cornbread elevates the flavor for this classic side. It’s the perfect addition to a bowl of chili or a fried chicken meal, so be sure to add this to your fall home menu!

Ingredients
1 can cream corn
1 cup milk
2 eggs, beaten
½ cup bacon drippings or ¼ to ½ cup vegetable oil
1 cup cornmeal
½ tsp. salt
½ tsp. baking soda
½ lb. grated cheddar cheese*
1 lb. hamburger, browned and drained
½ cup chopped onion
2 cups chopped, roasted green chiles or 2 (7-ounce) cans chopped green chiles, drained

Instructions
Combine cream corn, milk, eggs, and bacon drippings or oil with dry ingredients. Start with thin layer of cornmeal mixture in bottom of greased baking dish (9 x 13-inch) or iron skillet (standard size), then cheese, hamburger, onions, and green chiles. Finish cornmeal mixture. Bake at 350° F. for 45 to 60 minutes, or until golden brown.

*Jalapeño (hot) cheese or Pepper Jack cheese can be used, omit the cheddar cheese and green chiles.

How to Make this Recipe Lighter
