Our Lemon Bars are a fun addition for a bake sale fundraiser, your kiddo’s lemonade stand, and any summer picnic. This dessert is so delicious you just might want to take more than one before they disappear at your next family get-together!
Filling Ingredients
4 eggs
2 cups sugar
¼ tsp. salt
6 Tbsps. lemon juice
Grated rind of 2 lemons
2 tsps. powdered sugar
¼ cup flour
Crust Ingredients
2 cups flour
½ lb. butter, softened
½ cup powdered sugar
Crust Instructions
Mix or blend 2 cups flour, butter, and ½ cup powdered sugar. Press into a 9 x 13-inch pan. Bake at 350° F for 15 minutes or until the edges are a pale gold. Then start making lemon bar filling.
Filling Instructions
Mix eggs, sugar, and salt. Blend in the lemon juice and grated lemon rind. Sift ¼ cup flour and 2 tsps. powdered sugar, and fold into the egg mixture. Pour entire mixture into the crust and bake at 350° F for an additional 30 minutes or until the edges may be loosened with a spatula. Sift powdered sugar on top. Cool and cut into squares to serve.
How to Make this Recipe Lighter
– Use a sugar substitute instead of sugar. We recommend checking the specific brand’s guidelines for proper conversion, as measurements may vary depending on the type of sugar substitute used.
– Use light butter or margarine.
– Do not sprinkle powdered sugar on top.
